CB Invest Food Innovations

Viva Vanilla was formulated at the City Kidz® vintage Springfield location in Jacksonville, Florida by Pastor Bush assisted by twelve middle and high school students in the International Bachelorette and honors programs.   They were quipped with state of the art stainless steel batch freezers, soft serve machines and a hardening cabinet at adjacent City Kidz® Food Science Lab where the product is made weekly.​

Before production, the students took an intensive 15-week course on Food Science taught by Pastor Bush and moguls in the industry and several college professors from top universities.   Professors and industry experts taught about varying aspects of ice cream including milk composition, microbiology, the legal standard identity of ice cream, ice cream composition, dairy ingredients, sugars and sweeteners, stabilizers and emulsifiers, mix calculations, mix processing, government regulation, origins of vanilla, food marketing, mix blend systems, and food processing equipment.​

Before submission to the World Dairy Expo, an international competition with industry leaders, the final formulation was completed in the David Michaels lab in Philadelphia, PA.  David Michaels is a flavor innovator with international clients. The formulations tested there are now used in the Viva Vanilla ice cream produced at City Kidz®.​
